This chickpea salad is bright, crunchy and filling enough to be lunch on its own. It is also one of the best salads for meal prep because it improves as it sits, rather than wilting like leafy greens. Everything comes together in about 15 minutes with no cooking at all.
Ingredients
For the salad
– 2 cans (15 oz / 425 g each) chickpeas, drained and rinsed
– 1 English cucumber, diced
– 1 1/2 cups (225 g) cherry tomatoes, halved
– 1 red bell pepper, diced
– 1/2 small red onion, finely diced
– 1/2 cup (75 g) Kalamata olives, halved
– 3/4 cup (110 g) crumbled feta
– 1/4 cup (10 g) chopped fresh parsley
– 2 tablespoons chopped fresh mint, optional
For the lemon oregano dressing
– 1/4 cup (60 ml) extra-virgin olive oil
– 3 tablespoons fresh lemon juice
– 1 tablespoon red wine vinegar
– 1 small garlic clove, grated
– 1 teaspoon dried oregano
– 1 teaspoon Dijon mustard
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Step-by-Step Instructions
- Make the dressing. In a jar or small bowl, whisk or shake all the dressing ingredients until emulsified.
- Soften the onion (optional). If raw onion is too strong for you, soak the diced onion in cold water for 10 minutes, then drain. This removes much of the sharpness.
- Combine the salad. In a large bowl, add the chickpeas, cucumber, tomatoes, bell pepper, onion and olives.
- Dress. Pour the dressing over the salad and toss to coat.
- Add feta and herbs. Gently fold in the feta, parsley and mint.
- Rest and serve. Let the salad stand for 10 minutes so the chickpeas absorb the dressing. Toss again before serving.
Tips for Success
- Dry the chickpeas after rinsing so the dressing clings to them.
- Seed the cucumber if making the salad ahead; this prevents excess water from pooling.
- Use good olive oil. With so few ingredients in the dressing, the oil’s flavor really comes through.
- Add feta last so it stays in pieces rather than dissolving.
Variations
- Add grains: Toss in 1 1/2 cups cooked quinoa, bulgur or farro for a heartier bowl.
- With protein: Top with grilled chicken, salmon or hard-boiled eggs.
- Vegan: Skip the feta or use a plant-based feta; add diced avocado for creaminess.
- Greens: Serve the salad over arugula or romaine just before eating.
Meal Prep and Storage
This salad keeps well in an airtight container in the refrigerator for up to 4 days. For the best texture, store the dressing separately if keeping it longer than a day, and add the feta and herbs just before serving.
Frequently Asked Questions
Can I use dried chickpeas?
Yes. Cook 1 1/4 cups dried chickpeas until tender, which yields roughly the same amount as two cans. Let them cool before using.
Is this salad healthy?
Chickpeas provide plant protein and fiber, the vegetables add vitamins and crunch, and the olive oil dressing provides healthy fats. It is a balanced, nourishing meal.
What can I serve with it?
Serve it with warm pita, hummus, grilled meats or fish, or stuff it into a pita pocket with a spoon of tzatziki for an easy sandwich.
A Note on Balance
A good salad dressing has a balance of fat, acid and salt. If your salad tastes flat, add a pinch of salt. If it tastes heavy, add a squeeze of lemon. Adjusting at the end is what makes a simple salad taste great.
